Fun with Valentine's Day Funfetti


A co-worker wanted Funfetti cake truffles for his birthday and who am I to deny anyone my fantastic baking? It also gave me a chance to try out the super cute Valentine's Day Funfetti. Of course, Funfetti is just yellow cake mix with sprinkles, but when it's all mixed together in truffle form, it makes the cake pink! These were quite tasty, although no one at my work would know because he wouldn't share.  Is he stingy or are they just that good? Hmmm...


I also did some experimenting before I started making the truffles. I sliced the cake in half horizontally to make it manageable and cut the cake into pretty little rounds using a mini cookie cutter. After freezing the little cakes overnight I melted the pink Valentine's Day Funfetti frosting and dunked away. The key is the frozen cake. Even after dunking five little cakes, the rest started to get soft and were not as dunkable as they started to fall apart. Patience is a virtue... Well, even though I'm on a diet, these things are like the size of a quarter, so I had a couple. Something so little can't have that many calories, right? They were super cute, so therefore, worth it!
